Extra virgin olive oil obtained by olives cultivated, picked and processed in BITONTO Protected Designation of Origin area (Bari – Puglia). Packed in BITONTO PDO area.
Composition: superior category olive oil obtained from olives and solely by mechanical means;
Production area: BITONTO Protected Designation of Origin area (Bari – Puglia);
Crop season: October – January;
Olive varieties: essentially Coratina and Cima di Bitonto according to TERRA DI BARI BITONTO PDO production specification;
Pressing: mechanical crusher; Extraction: by cold extraction (T<27°C).
Characteristics
Aspect: clear;
Colour: green with golden reflections;
Aroma: medium fruity;
Flavour: fruity with pleasant green grass sensation and nice bitter and spicy notes;
Acidity: below 0,5% (TERRA DI BARI BITONTO PDO production specification limit 0,5%).
Suggested pairings
It’s ideal for all types of cooking. However, it best expresses its distinct organoleptic qualities when used raw on traditional Apulian recipes as fish soups, orecchiette with turnip tops and on boiled vegetables.
