Composition: superior category olive oil obtained from olives and solely by mechanical means;
Production area: Sicily region, Protected Geographical Indication area;
Crop season: September – December;
Olive varieties: essentially Aitana, Biancolilla, Bottone di gallo, Brandofino, Calatina, Cavalieri, Cerasuola, Crastu, Erbano, Giarraffa, Lumiaru, Marmorigna, Minuta, Moresca, Nasitana, Nerba, Nocellara del Belice, Nocellara etnea, Nocellara messinese, Ogliarola messinese, Olivo di Mandanici, Piricuddara, Santagatese, Tonda iblea, Vaddarica, Verdello, Verdese, Zaituna and similar according to SICILIA PGI production specification.
Pressing: mechanical crusher;
Extraction: by cold extraction (T<27°C).
Characteristics
Aspect: clear;
Colour: green with yellow straw hues;
Aroma: fruity with almond, green tomato and artichoke notes;
Flavour: fruity and sweet taste, with a light and lovely spicy sensation;
Acidity: below 0,5% (SICILIA PGI production specification limit 0,5%);
