Product description
Extra virgin olive oil obtained by olives cultivated, picked and processed in Puglia. Packed in Puglia.
Composition: superior category olive oil obtained from olives and solely by mechanical means;
Production area: Puglia region, Protected Geographical Indication area;
Crop season: October – December;
Olive varieties: essentially Cellina di Nardò, Cima di Bitonto, Cima di Melfi, Frantoio, Ogliarola salentina, Coratina, Favolosa, Leccino and Peranzana according to PUGLIA PGI production specification.
Pressing: mechanical crusher;
Extraction: by cold extraction (T<27°C).
Characteristics
Aspect: clear;
Colour: light green with golden notes;
Aroma: fruity with vegetal notes of freshly mowed grass, fresh almond and artichoke;
Flavour: bitter and spicy notes of mixed intensity with hints of green almond and/or thistle, an aftertaste of green herbs, artichoke, vegetables and light hints of fresh almonds;
Acidity: below 0,4% (PUGLIA PGI production specification limit 0,4%).
Suggested pairings
It’s ideal for all types of cooking. It best expresses its distinct organoleptic qualities when used raw on traditional Apulian recipes, such as fish soups, orecchiette with turnip tops and boiled vegetables.
