Product description
Extra virgin olive oil obtained by olives cultivated, picked and processed in Lazio olive-growing area.
Composition: superior category olive oil obtained from olives and solely by mechanical means;
Production area: the whole of Lazio’s main olive-growing area;
Crop season: October – December;
Olive varieties: essentially Itrana, Carboncella, Leccino, Moraiolo, Caninese, Salviana, Rosciola, Marina, Sirole, Maurino, Pendolino and Frantoio according to ROMA PGI production specification.
Pressing: mechanical crusher;
Extraction: by cold extraction (T<27°C).
Characteristics
Aspect: clear;
Colour: light green with golden notes;
Aroma: fruity of varying intensity, with distinct notes of tomato and/or artichoke and/or almond and/or herbaceous;
Flavour: bitterness and pungency of varying intensity with vegetable notes of tomato and/or artichoke and/or almond and/or herbaceous;
Acidity: below 0,4% (ROMA PGI production specification limit 0,4%).
